Structural role
Proteins are essential components of the cells of all living things – plants, animals, and even microorganisms. Every tissue and fluid in the body except bile and urine contains some protein. Proteins furnish 4 kcal per gram. If the diet contains more protein than is needed, the nitrogen will be removed from the excess amino acids by the liver. The nitrogen is excreted in the form of urea by the kidney. The remainder of the amino acid molecule is then used as an immediate source of energy, or it may be stored in the form of fat. If the diet docs not contain sufficient calorics from carbohydrate and fat, the protein will be used for energy rather than for building or replacing tissues.
